  1. Preheat the oven to 180ºC (360ºF). Line tray with baking paper
  2. Beat eggs, sugar, butter, vanilla and orange zest together until thick. Combine flour and baking powder. Add the nuts (pistachio and almonds) and stir to combine. Mix well until well blended
  3. Pour into the prepared tray and flatten slightly. Bake for 35-40 minutes, until firm. Remove from the oven. Let it cool.
  4. Decrease the oven temperature to 140ºC (275ºF). Cut the loaf into thick slices. Place on tray and bake in the oven for 15 minutes, until golden and crisp. Transfer into a wire track to cool completely.
  5. Serve, share and enjoy.
  6. Note: We can store biscotti in an airtight container for up to 1 month, if desired.
