  1. Get 1 box lasagna noodles

  7. Make ready 15 oz ricotta cheese

Next lay out your first layer of noodles and cover with meat sauce. I plan to make your lasagna for Christmas Eve two days ahead of time. I will keep it refrigerated until Christmas Eve and bake it that day using the non cooked noodles. A delicious, creamy lasagna with alfredo sauce.

Instructions to make Two layer alfredo lasagna:
  1. Preheat oven to 350°
  2. Cook lasagna noodles in salted water.
  3. Meanwhile cube chicken breasts and add to pan. Season chicken with oregano and garlic.
  4. In a seperate pan add olive oil, salt & black pepper, sliced mushrooms, and chopped onion. Simmer until onions are translucent.
  5. Fold ricotta, alfredo sauce, and spinach into the onions and mushrooms and remove pan from heat.
  6. Oil the 9x13 pan and add a layer of lasagna noodles. (i used 3 noodles each layer, 9 noodles total)
  7. Cover the noodles with the sauce mixture in a semi-thick fashion. Then add the cubed chicken. Another layer of noodles. And so on so forth until all ingredients are used. (make sure you leave enough sauce to cover the top of the noodles when done layering)
  8. Once everything is layered cover pan with the aluminium foil and put in preheated oven.
  9. Bake covered for 20-25 minutes.
  10. Remove lasagna from oven and let it settle for five minutes. Uncover. Serve. And enjoy!'

I will keep it refrigerated until Christmas Eve and bake it that day using the non cooked noodles. A delicious, creamy lasagna with alfredo sauce. I made it for a fundraiser dinner and had to fight to keep the carnivores from eating it so the vegetarians who had signed up for the vegetarion dinner could have it! The lasagna was perfectly cheesy and saucy. I was afraid that it was going to turn out dry but it came out just right.
