  1. Sieve together flour and baking powder.
  2. In a pan dry roast 1 cup of peanuts in medium heat until they start crackle.
  3. Transfer to a plate and remove skin.
  4. With a mortar and pestle crush the peanuts slightly.
  5. In a mixing bowl add brown sugar and soft butter.
  6. Mix well using your hand.
  7. Add Vanilla essence and egg. Mix again to combine well.
  8. Add crushed peanut and mix.
  9. Add flour mixture and mix well.
  10. Add oats and combine.
  11. Make a soft dough by combining everything well.
  12. Keep the dough in the refrigerator for 1/2 an hour to set.
  13. Prepare a baking tray with baking sheet.
  14. When the dough becomes little hard take out from refrigerator.
  15. Take small lime size portion and roll it in between your palm to make ball.
  16. Press in between palm to make little flat.
  17. Like this shape all the cookies and arrange in the baking tray(put 2 inch gap between the cookies).
  18. Preheat oven at 170 degree C for 10 minute.
  19. Bake the cookies for 10 to 12 minutes or until the sides of the cookies start changing colour.
  20. Be sure not to over bake the cookies, otherwise the cookies may get burn from back side.
  21. Take out from oven and keep untouched for 10 minutes to cool.
  22. After 10 minutes transfer them to wired rack to completely cool.
  23. My cookies take exact 10 minutes to cook.
  24. They are soft, slightly chewy with amazing flavour.

Very good cookies with just a little tweaking. Just for something a little different I threw in a package of chocolate/peanut butter swirl chips.
