  6. Blend spinach. Return this blended spinach into the wok/pan and simmer for a minute or two. Stir in extra splashes of cream (optional). Lastly, Add fried tofu cubes to your pureed spinach.

Let this cook until the tomatoes have broken I just made this and it is AWESOME! I wanted more veggies in so I added thee handfuls of baby kale. Tofu is roasted for few minutes on a pan and then added to the spinach curry. This is your healthy, wholesome dinner and you cannot go wrong with this. Take the same pan in which you had cooked the tomato and spinach and add the spinach puree to it on medium heat.
