To get started with this particular recipe, we must first prepare a few ingredients. You can cook okara and banana cookies, version 2 using 2 ingredients and 7 steps. Here is how you can achieve that.

The ingredients needed to make Okara and Banana Cookies, Version 2:
  1. Prepare 250 grams Fresh okara
  2. Get 1 to 3 Ripe bananas

Microwave the banana to make it easier to mash. I tried making this many times, adjusting the ingredients and amounts. This is the most delicious version. It's best if the bananas are ripe and starting to darken.

Steps to make Okara and Banana Cookies, Version 2:
  1. Dry roast the fresh okara in a pan. Take care not to let it burn.
  2. When the okara is dry, transfer to a bowl and leave to cool. (250 g of fresh moist okara became 150g this time.)
  3. Add the bananas to the okara and mix well.
  4. Adjust the amount of banana so that the dough doesn't become too soft. By using very ripe bananas, the cookies will be sweet even if you add just a small amount.
  5. When the dough comes together, wrap it up in plastic wrap and let rest for about 2 hours. (If you freeze it for too long, it will become too hard to cut, so check on it.)
  6. Slice thinly, spread out on a baking sheet, and bake in a preheated 340°F/170°C oven for 20 to 25 minutes. If the cookies aren't crispy enough at that point, bake at 320°F/160°C for another 20 minutes or so.
  7. Done! Adjust the cooking time by checking on the cookies.

This is the most delicious version. It's best if the bananas are ripe and starting to darken. If the bananas are not ripe enough, it won't be very sweet, so increase the amount. Okara is a byproduct of the making of all soy "dairy" foods. The cookies are firm on the outside and soft inside.
