Lo mein is a Chinese dish with egg noodles. It often contains vegetables and some type of meat or seafood, usually beef, chicken, pork, shrimp or wontons.

To get started with this particular recipe, we have to prepare a few ingredients. You can have chicken lo mein using 14 ingredients and 7 steps. Here is how you cook it.

The ingredients needed to make Chicken Lo Mein:
  1. Prepare 1-2 lb chicken (shredded if pre-cooked) cut into strips if raw
  2. Take 3 tablespoons rice wine vinegar
  3. Take 1/2 cup soy sauce
  4. Take 1 1/4 cups chicken broth or vegetable broth
  5. Make ready 1 tablespoon sesame oil
  6. Take 1/2 teaspoon ground black pepper
  7. Take 2 tablespoons cornstarch
  8. Make ready 1 Package uncooked Lo Mein Noodles
  9. Make ready 2 tablespoons minced fresh ginger root (you can use dry as well but it wont be as powerful in flavor)
  10. Prepare 3 cloves minced garlic
  11. Prepare 7 oz fresh shiitake mushrooms, stemmed and sliced
  12. Make ready 6 green onions, whites and greens chopped
  13. Prepare 2 small zucchinis chopped into 1 inch cubes
  14. Get 1 cup mirin

Hence the need for this recipe. Lo Mein sauce is made from a stock (chicken or pork bone stock) and seasonings such as soy sauce, oyster sauce, sugar and sesame oil. Chicken Lo Mein is made without stir-frying. Sure it was a combo of chicken & veggie Lo Mein but wow was it good.

Instructions to make Chicken Lo Mein:
  1. Combine rice wine vinegar, soy sauce, mirin, broth, sesame oil, black pepper, ginger, and garlic in a large bowl to create the sauce marinade. Wisk together well.
  2. Chop onions, zucchini and shiitake mushrooms and add to the sauce marinade.
  3. Add the sliced chicken to the sauce marinade. Note: Letting this marinate in the fridge will enhance the flavor in the ingredients and not just the sauce.
  4. Cook the Lo Mein noodles according to package directions. Drain and set aside.
  5. Add chicken, vegetables, and sauce to wok or skillet on high heat and simmer for 10 minutes.
  6. Take a small bowl or glass and remove 1/4 cup of the heated sauce and add the cornstarch and mix thoroughly.
  7. Add the cornstarch mixture and the Lo Mein to the wok with the simmering chicken and vegetable and the remainder of the sauce. Simmer for 3 minutes. Serve.

Chicken Lo Mein is made without stir-frying. Sure it was a combo of chicken & veggie Lo Mein but wow was it good. Used the base sauce here and as others suggested- skipped the cup. This chicken lo mein is sauteed chicken and vegetables tossed with egg noodles in a savory sauce. A remake of the take out favorite that tastes even better than the restaurant version!
